A Heart Healthy Recipe for American Heart Month

February is the month to remind ourselves of the dangers of heart disease as the American Heart Association has named it American Heart Month.  This is a month to start living life with a new approach to eating heart healthy and improving ones’ lifestyle.

One way to do so, is to follow this delicious, healthy recipe that uses Mediterranean tuna and radicchio in a combination that is perfect for any dinner or holiday celebration.

This recipe includes the following ingredients:

  • Tuna-2 cans
  • cannellini beans-1 can
  • Celery stalks-2 plus 1/2 cup celery leaves for a garnish
  • red onion-1/2 cup sliced thin
  • radicchio lettuce-1 full head, 4 outer leaves washed for serving

In a bowl combine the tuna, cannellini beans (thoroughly washed) celery and onions and toss.

For flavor add some lemon juice (about ¼ cup), ¼ cup of olive oil, some coarse salt and some ground pepper (just enough to taste) toss these ingredients to taste.

Add 4 small radishes sliced and 1/2 sliced cucumber and toss this mixture one more time. Finally serve this delicious combination in a radicchio bowl and serve.

This meal takes about 20 minutes to prepare and easily will complement a soup and sandwich combination as a full dinner meal.
